Their First Home - “DEAL FINALLY INKED”

WILLOW GLEN - In less than a year, the little microbrewery known as T.ROY Brewing Company�, has completed test marketing its flagship product Hoppy Face™ Amber Ale, and now has plans to build their first brewpub in San Jose. “After months of searching for the “right” location, we have signed an agreement to build our first brewpub on Lincoln avenue in the heart of downtown Willow Glen, which as some of you may already know, is this great little town with its own unique character residing within the San Jose city limits”, says company president Troy Paski. “We have had several buildings/sites in mind along Lincoln avenue since late last year, but nothing was really much clicking, and then one day the whole concept came together rather quickly when former Eulipia assistant chef, Tony Hernandez came into the picture”, continues Troy.

“I have been wanting to put together this nifty restaurant idea in Willow Glen for sometime now”, adds Tony, “and doing it in conjunction with T.ROY makes perfect sense to me.” “This place will also give us the opportunity to not only give people tours of our brewing operation, but to also further refine our Total Eclipse™ Dark Ale and our Liquid Sunshine™ Pale Ale on a larger scale”, adds chief brewer Craig Swackhammer. “Our tentative name for the retail establishment is “The PubZtaurant™ - Willow Glen”, but that could change as Tony further develops his menu”, concludes Troy. Since they have plans to open five or six more of these retail type places around the country in the next few years, Troy believes that Willow Glen will provide a perfect test-bed for their beer and food concept when the doors open to this new establishment sometime this fall!

The Brewer’s Corner - Technical Series (part 2)

WILLOW GLEN - The transformation of grain to alcohol begins with malting. Malting the grain (usually barley) consists of first soaking the grain in water, then it is spread on the floor and allowed to sprout. An embryo, or acrospire, begins to grow below the husk, and tiny rootlets appear at the bottom of the grain. At the same time, complex chemicals called enzymes are being produced. Their function is to breakdown the complex starches and proteins of the grain into simple sugars and amino acids that will feed the growing plant. However, before the acrospire even reaches the tip of the grain, the maltster intervenes. He transfers the grain to a large kiln, where it is dried out and the acrospire is killed. The object of this process is to get maximum production of the vital enzymes, but then halt germination before the growing embryo uses up much of the food material in the grain.

Mashing is the process of creating the ideal medium to reactivate the dormant enzymes to create simple sugars from the grain starch. These newly created sugars will be food for the yeast, which will creates alcohol and carbon dioxide during the fermantation process.

First, the malt is crushed to expose the starchy interiors, and then infused, or mashed in, with a volume of water. The water is heated to various temperatures to activate and de-activate the various resident enzymes. Complex proteins are broken down into simpler proteins which will nourish the yeast and impart palate fullness or body to the beer. Other enzymes work in stages to break down the starch into complex and simple sugars. The latter (chiefly maltose) are what the yeast will ferment (or feed on). The complex sugars remain in the beer and give it its smooth, malty taste. After these steps have been completed, the temperature of the mash is raised again, to halt enzyme activity and the make the sugar solution (wort) run as freely as possible. Finally the wort is ready to be separated from the grains. This process is called lautering, and will be the subject of our next technical letter. Until then hoppy brewing - by Craig Swackhammer

Half Moon Bay Brew-Ha-Ha Spotlight

HALF MOON BAY - The Hoppy Crew, in its first road-show appearance of the season, had a blast talking with people about their beer, and it was all for a good cause too... The Brew-Ha-Ha is an annual fund raising event for the Coastside Infant Toddler Center, and all proceeds raised by the event go to support this high quality child care facility. It seems that as the microbrewery industry continues to grow and gain mainstream acceptance, so do these types quality events!!!

The event was held indoors at the largest building in Half Moon Bay (HMB), known as the IDES Hall, and with the normally foggy weather to be found in HMB, it was a good thing the event was inside... The building accommodated, very comfortably, what turned out on game day to be 17 micro’s mostly from the area. On one side of the beer spectrum being represented was Sam Adams, who had a grand display of bottles being poured, while at the other end were a couple of home-brewer’s pouring their latest draft and possibly even on the edge of going commercial!

In the “resting” area, there was an immense selection of food to be consumed, and it was all donated by various local vendors! One could easily be found eating a fabulous polish sausage-dog, while taking in the sounds of an Irish folk artist in this room, while at the same time in the big hall next door a couple of thousand people could be found skipping from booth to booth to the beat of a caribbean soca band...

The Hoppy Crew is already looking forward to attending next years event in HMB, so if you missed it this year, and are looking for a good reason to go on an afternoon road trip, we will see you there next year!!!

Hoppy Face Found in D.C.!!!

The House of Wines in Washington, sitting within ear-shot of the Senate, now has a reason to be Hoppy!!! The House (not our elected types...) recently had the good fortune of receiving a cross country load of Hoppy Face before the weather heats up. This place specializes in carrying rather hard to find beers from around the country, and if you are any place outside of California, you may already know how hard it is to find a cold Hoppy Face...

May 27th - Highway 9 - Felton
High in the mountains and amidst ancient redwoods, a memorial day celebration of the century will take place. The Hoppy Crew, with its recently assembled off-road gear, will take to the back woods to explore this beautiful mountain country!!!

June 3rd - Pacific Tap & Grill - San Rafael
In this year’s BREWFEST 1995, a fund-raiser for The American Cancer Society, the Hoppy Crew makes its debut performance! Travel north, and have some fun for a great cause!!!

June 30th - Brew Master’s - Pacific Grove
This annual festival is full of great food, excellent beer, and tons of fun! Take a drive south, and experience the tip of the Monterey peninsula!!!

July 15 & 16th - Small Brewer’s - Mtn. View
Experience two “daze” of bliss at this annual festival! This will be the Hoppy Crews’ first birthday, so you never know what might hoppen...
